Brooke’s Spinach Salad

My husband is not a salad eater, but frequently requests this one.

Ingredients

3/4 cup toasted, sliced almonds

1 pound spinach, rinsed and torn into bite-size pieces

1 cup dried cranberries (or Craisins)

2 tablespoons toasted sesame seeds

1 tablespoon poppy seeds

1/2 cup white sugar

2 teaspoons minced onion

1/4 teaspoon paprika

1/4 cup white wine vinegar

1/4 cup cider vinegar

1/2 cup olive oil

Directions

In a large bowl, mix almonds, spinach, and cranberries. Mix the remaining ingredients in small bowl to make a dressing. Toss with spinach just before serving.
